The study involved 12 volunteers who consumed Aciapulp and in the form of juice, the latter containing half the concentration of anthocyanins - pigments that give color to fruit - than the version in the flesh. The two foods were compared with juices without antioxidant properties, used as control.
Samples of blood and urine of the participants were taken 12 and 24 hours after consumption and analyzed. According to the researchers, both the pulp and the juice showed significant absorption of antioxidants in blood after being consumed.
